Flo & Fjære Bistro opens at Fjord Hotel Alta

The restaurant at Fjord Hotel Alta has reopened as Flo & Fjære, the only restaurant in Alta with a view over the fjord from both the dining room and the terrace.

The room was rebuilt rather than replaced. The kitchen has been upgraded to current standards, while the original wooden floors were sanded and kept in place. The interior follows the building's own language: driftwood, charred pine panelling and warm materials, chosen to sit with the structure rather than against it.

Flo & Fjære operates as an informal bistro built on Northern Norwegian produce, and the sourcing is specific rather than stated. Cured meats and cheeses come from Mannsverk Gård, the beef is grass-fed Angus from Mathilassi Gård, and reindeer comes from Sami producers in the region. Both farms are neighbours in Alta. The kitchen works directly with local fishermen, farmers and foragers, which is why the menu changes with what Finnmark actually has.

The intention was never a hotel restaurant that happens to serve guests, but a restaurant that happens to sit inside a hotel. That distinction has held. The dining room draws guests from the hotel and people from Alta in roughly equal measure, and it has been full for major sporting events since opening. The menu runs in Norwegian and English side by side, with a children's section and a plant-based option at no surcharge, because a restaurant meant for a town has to work for everyone in it.

Work is now under way to serve christenings, weddings and private functions properly, which requires a different set-up than daily service.

The location does something a town-centre restaurant cannot copy. In summer, guests eat under the midnight sun from the terrace. In winter, the northern lights appear over the fjord from the same tables. The view is the one part of the concept that took no investment and cannot be reproduced elsewhere in Alta.

Arctic Circle's approach is to develop places gradually and in step with the destination they sit in. A restaurant that builds its own local following, rather than depending on hotel occupancy, is what makes a destination hold through the year.
